With a length of 24 cm, the Gyutoh from the Miyabi 6000MCT series is suitable for cutting and separating fish and meat. The thin point and the robust blade ensure that you cut very finely. The flat finish prevents your hand from slipping from the handle to the blade, making this knife safe to use. In addition, Miyabi 's knives have a Japanese blade profile, which means that the Gyutoh offers high-quality cutting performance and optimal comfort. The blade consists of a core of MicroCarbide powder steel, embedded in two layers of steel. It is hammer-forged, giving it a Tschumine-like appearance. In addition, each blade in the Miyabi 6000MCT range undergoes several ice hardening processes at -196°C to achieve a rockwell hardness of approximately 63. The blade is polished on both sides and finished by hand using the Honbazuke sharpening technique. The handle is made of Pakka wood with a subtle pattern and an impressive robustness and suppleness. Thanks to the perfect balance, the knife feels extremely comfortable and you can continue working effortlessly. This makes this Miyabi knife one of the most useful knives in your kitchen.
